Healthy Easy Cookie Recipe

Cookies. Who doesn’t love cookies? I  could live on them everyday. I never really was a top chef when it came to baking. Well, actually, I was (and still am) awful. Luckily for me, I found different cookie recipes from the Internet claiming to be “easy” and surprisingly, my beloved snack didn’t turn out as bad as I thought it would! (Mm burning them doesn’t count)

Since I enjoy my treats so much especially if they are healthy, I found replacements for the sugar and fats in different recipes.

This is where my concept of seeing cookies like pizza comes in. You get to choose toppings for your pizza so why not do the same with cookies?

Here all I will do is give you the recipe of the base of my cookies and then all you’ll have to do is personalize it with your toppings!

Cookie base recipe (healthy):

(The height of one cup is about the size  of your palm)

  • 1 cup of oats (or oat bran if not an oatmeal cookie)
  • 1/2 cup of almond flour 
  • 1 tsp. baking powder
  • A pinch of salt
  • 1/2 cup of agave sirop
  • 2 tbsp. coconut or olive oil (your preference)
  • 1 tsp. of chia seeds or xantham gum (to make the dough stick!)

Mix everything together in a salad bowl and this will normally give a solid base. Then add your favorite toppings!

Cooking time is around 25 minutes at either 300 Fahrenheit or 150 degrees. Make sure to take out the cookies out of the oven before they are too hard. They will harden on their own when cooling off.

I made oatmeal raisin cookies (picture) so I added : slithered almonds, raisins, vanilla extract and cinnamon 🍪 enjoy!
